Halloumi avocado toast is an easy lunch that is tasty and nutritious.
Sometimes simple is best. Sometimes when you don’t have it in you to make a big meal. Or you don’t have the groceries. Or you don’t even know what you would make if you could make anything.

I often eat cheese and crackers or yogurt for lunch. It’s easy and requires no effort. And sometimes that’s what you need. But I get tired of that, and that brings me to toast. With some good bread, you can top it with almost anything and it will turn out good. Case in point: Halloumi avocado toast.
If you’ve never had halloumi, you’re in for a treat. It’s cheese that you can sear in a pan to form a nice golden browned crispy crust. It’s amazing on its own, but it’s also tasty in a salad, or sliced thin, seared, and topped added to toast with creamy avocado. A bit of red pepper flakes (or Hot Roasted Garlic if you can get some) and it’s truly amazing.
The key to making this tasty is to make sure you have the aforementioned good bread, and that your avocado is seasoned well. Because it’s kinda bland otherwise. And luckily, all it takes is some salt and lemon. Mash it up. Spread it over your toast. Top with your seared halloumi.
Avocados are a hassle, I know. I never not regret buying them, unless I am buying a ripe one to use immediately when I get home. Because otherwise, I am probably either eating it too raw, or opening it up to find the entire thing is browned in a bad way. But if you can time it right and make this toast, you won’t regret a thing. That I can promise you.

Equipment

Ingredients
  

  • 1 ripe avocado
  • Juice of 1 lemon
  • Coarse sea salt
  • 2 thick slices of halloumi
  • 2 slices good hearty bread, toasted
  • Crushed red pepper flakes

Instructions
 

  • Peel the avocado, remove the pit, and put in a bowl with the lemon and salt. Mash it well.
  • Heat a nonstick skillet (cast iron works well here) to medium high heat.
  • Add the halloumi slices, and let sizzle and cook until browned on both sides.
  • Spread the avocado on the toast, top with the halloumi and sprinkle with pepper flakes.

Notes

Storing leftovers: This is best made when ready to serve.
