Barbecue Salmon with Mango Pepper Salsa

An easy barbecue salmon with mango salsa is perfect for a busy weeknight when you want something fresh and healthy.
One of my favorite easy meals is a piece of salmon, in one of many ways. It surprises me when people tell me they are scared to cook fish at home because they’re afraid to mess it up because I make it all the time.

This recipe starts with a quick brown sugar and spice blend and ends with a mango pepper salsa. It has its challenges, though, and that is the mango part.
Like most fruits, mangos aren’t the best when they come from a midwest grocery store. I mean, why would they be? They’re grown in tropical climates and will be soft and ripe to be sweet. When you buy one at the grocery store, it’s kind of like buying an avocado. If it’s hard, wait a few days to eat it and color is no real indicator of what it will taste like. If you can find a soft one that smells sweet at the stem end, that’s a good one, no matter what it looks like.

The salsa is a simple mix of sweet bell peppers, spicy jalapeños, red onion, lime, and cilantro. It’s perfect with this salmon, but it is also a great addition to a chip and dip platter. It’s different from the usual tomato or avocado dips, and I’m telling you, it almost always disappears fast.
The salmon is easy to cook. Drizzle with oil. Simply mix the spices and roast in a high-heat oven for about 10 minutes per inch of thickness. Let it rest for 3-4 minutes when you take it out of the oven for perfection every time.
I like to eat this with brown rice but a fragrant jasmine or basmati rice would also be nice with this. No matter what you choose, this is sure to be a hit.

Ingredients
  

Salmon:

  • 2 salmon filets
  • 2 tablespoon olive oil
  • 1 tablespoon brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Mango Pepper Salsa:

  • 1 ripe mango peeled, seeded and diced
  • 1/2 red bell pepper diced
  • 1 jalapeno minced
  • 1/2 small red onion diced
  • 1 small bunch cilantro chopped
  • Juice of 1 lime

Instructions
 

  • Preheat oven to 425 degrees F. Lay the salmon on a parchment lined baking sheet and drizzle with the oil.
  • Combine the spices and sprinkle evenly over the salmon. Bake for 10-15 minutes, until done to your liking.
  • While the salmon is baking, combine the ingredients for the salsa until mixed well.
  • When the salmon is done, spoon the salsa over top.
