An easy asparagus puff pastry appetizer that everyone will be reaching for seconds.
I love spring. The weather starts to get warmer after a long winter. But also because it’s the beginning of produce season. Some of my favorites are happening right now. Strawberries. Rhubarb. Fresh herbs. And one of my favorite veggies: Asparagus.

You can buy asparagus all year round, but in the winter, you get fat, flavorless stalks that don’t have that subtle spring flavor. This time of year, markets are brimming with thinner, delicate stalks that are more tender and less woody. I like asparagus in a lot of ways. Salads, soups, or even just roasted with a bit of olive oil and lemon.

Which makes them perfect for this asparagus puff pastry appetizer. If you’re looking for something easy to add to a brunch buffet (Mother’s Day anyone?) this is it.
For starters, it’s easy. Just get pre-made puff pastry (all butter please!) and a soft cheese of your choice. Brie, burrata, or goat cheese are perfect here. You’ll cut the pastry into squares, wrap your asparagus and bake until golden brown.

At the end, a drizzle of hot honey takes it to another level. You can use Mike’s Hot Honey if you like. Or you can make your own with a few ingredients that you may have on hand. If you don’t like the heat, regular honey will certainly do, but I find that a bit of spice balances out the delicate flavor and tender pastry well.
Add a big platter of these to a brunch table, or make them as a side to a spring dinner you eat all by yourself. Whichever you choose, you’ll be amazed at how fresh and indulgent this appetizer is. Expect plenty of compliments as well as recipe requests.
