Seriously Good Salmon Tacos

i like to try new foods and when i come up with a recipe idea, i can’t get it out of my head until i try it.

there is something about a tried and true recipe that is delicious every single time you make it. even better if it’s ridiculously easy and requires only a few ingredients.

like these fish tacos.

there are only a few necessary ingredients — fish, tortillas, cabbage, salsa, sour cream —but you can add a few extra if you like. nothing crazy still.

it’s more the technique that makes this so good, but let’s start with the ingredients.

fish — my favorite is salmon. yes, salmon. i’ve made this with a couple different white fish and even shrimp, but salmon is by far my fave.

salsa — use your favorite fresh salsa at whichever heat level you like. jarred salsa would work in a pinch i suppose, but i’ve never tried it.

here’s the easy part — you’re going to get a stainless steel skillet hot. then you’re going to sear your seasoned fish in some neutral oil. you want it nice and browned on both sides. then you’re going to add some salsa to the pan, break it up and cook until the salmon is no longer pink. that’s it.

Ingredients
  

  • 2 tablespoons neutral oil
  • 2 skinless salmon filets
  • 1 teaspoon barbecue or taco seasoning
  • 1/2 cup fresh salsa

to serve:

  • warmed corn tortillas
  • 1 cup shredded cabbage
  • sour cream
  • chopped cilantro
  • hot sauce

Instructions
 

  • heat a stainless steel skillet to medium heat. add the oil and then add the salmon filets. sear until well browned on both sides.
  • when the salmon is browned and crispy, turn the heat off and add the salsa — be careful, it will probably smoke.
  • break up the salmon with a spatula and turn the heat back to medium.
  • continue cooking until salmon is no longer pink.
  • to serve, spoon the salmon into the warm tortillas and top with your favorites — i keep it simple with cabbage, sour cream, and hot sauce.
