Roasted Garlic Lemon Yogurt Dip

I like versatile sauces and dips that you can use on just about anything. Bonus points if they’re super easy to make, and seem a little fancy. Roasted garlic achieves that well, as you’ll see with this simple roasted garlic dip flavored with lemon.
It starts with a head of garlic that you drizzle with oil and roast until browned and caramelized and mellow and soft. You’ll then add it to tangy yogurt, with some lemon and herbs. Whisk away, and you have amazingness.
You can use this for just about anything — dip your fries in it, dollop on top of a quesadilla, or add it to a baked potato. There’s no end to what you can do with this, and once you make it, you’ll wonder why you’ve never made something so delicious before.

Ingredients
  

  • 1 head garlic
  • 1 tablespoon avocado oil or olive oil
  • 2 cups plain Greek yogurt
  • Juice and zest of 1 lemon
  • Fresh chopped herbs chives, parsley, mint all work well
  • Sea salt and fresh ground pepper to taste

Instructions
 

  • First, roast the garlic — cut the end off the garlic bulb to expose the cloves (not the root end.)
  • Put it on a piece of foil, drizzle with oil and wrap up tightly.
  • Put on a baking sheet and roast for 40 minutes.
  • Remove, let cool, and squeeze the bulb into a medium bowl.
  • Add the remaining ingredients and stir well.
  • Refrigerate until ready to serve.
