I eat a lot of spinach. I put it in smoothies, have made it into appetizers, and sometimes even eat it as a main course. My favorite way to eat it, however, might be this easy, 3 ingredient (okay 5 if you count salt and oil!) side dish. It comes together in minutes, and goes with everything.
The hardest part about this dish is timing it so that it’s done when the rest of your meal is because it literally only takes about 3 minutes.
If you’ve ever cooked spinach, you probably know that you’ll start with a lot and get a little. So don’t be alarmed when you put what you think is 4 servings and it looks like it’s barely two. You’re still eating all that spinach, it’s just condensed down. Use a deep skillet because you’re piling all that spinach in the pan at once, and when you try to mix it, you’re likely to get leaves everywhere. A deeper skillet alleviates that somewhat.
I like to make this and then put a crab cake or piece of salmon on top. With some rice or mashed potatoes, it’s easy and delicious.

Garlic Lemon Spinach
A quick and easy side dish that is healthy, delicious, and goes with just about everything. Perfect when you need a veggie in a flash!
Ingredients
- 1 tablespoon avocado oil (or olive oil)
- 3 cloves garlic minced
- 10 ounces baby spinach
- 1 tablespoon lemon juice
- Sea salt and fresh ground pepper to taste
Instructions
- In large deep skillet, heat the oil to medium. Add the garlic and a pinch of salt and stir with tongs for 30 seconds.
- Add the spinach and as quickly as you can, stir it until it starts to wilt. Turn the heat off, add the lemon juice and keep stirring.
- Season with more salt and pepper to taste, and serve immediately.
