Chocolate Almond Smoothie Bombs

I bought some protein powder  for a quick filling snack when I don’t have time for much else. I found that it doesn’t taste bad necessarily, but mixed with just almond milk, it’s kind of boring.
So I started trying different ways to liven it up, and one of the ways I found was to add a half a lara bar to it, with much improvement. I blend the lara bar, some protein powder, unsweetened almond milk, and ice, and it’s rich and satisfying.
Of course, lara bars, while tasty, and made of good ingredients, are expensive. After looking at the ingredients, mostly dates, nuts, and other dried fruit, I realized I could easily make my own. So that’s what I did.
The ones I typically buy are chocolate or chocolate peanut butter, although they do come in other flavors that are pretty tasty. So I started with some dates, almonds and chocolate chips. After tasting, I added my favorite sea salt, and a bit of vanilla extract. Perfection.
Instead of forming into bars, I formed them into balls about a tablespoon each. That way I can just throw one in my blender with my smoothie or eat a bite sized snack. While I usually use these with the protein powder, they’re also great in a banana smoothie or anywhere you want to add some nutrients and flavor.

Ingredients
  

  • 1 cup pitted dates
  • 1 cup raw almonds
  • 1/4 cup chocolate chips
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon Colima Sea Salt

Instructions
 

  • Put all of the ingredients in a food processor. Pulse until you have a sticky dough. Form into balls or press into a pan and form into bars.
  • Store in an airtight container in the freezer.
