I am not generally a fan of cauliflower masquerading as my favorite carbs. I’ve made it all — rice, mashed, pizza crust — and it rarely impresses me. I still try it, though, which is what brings me to this recipe.
I picked up some cauliflower gnocchi on a whim at Trader Joe’s, and while I wouldn’t call myself a convert, it worked here, in a creamy, cheese sauce, topped with crispy breadcrumbs.
Now, you can’t just boil this like you would potato gnocchi, or it turns gummy and mushy, or so I’ve read. So instead, you saute it in a pan in some butter or olive oil and then use it, so that’s what I did. From there, I tossed with a simple cheese sauce, broiled some more cheese on top, and then added some butter crisped panko, tossed with one of my favorite seasoning blends — Ava Jane’s Kitchen Hot Roasted Garlic
. So, while this version is not gluten-free, I’ve used these
, which are a pretty decent substitute.
All in all, this was a pretty good comforting meal, and makes a good low carb sub for mac n cheese
