Carrot Noodle Salad with Spicy Peanut Dressing

Carrot noodle salad doesn’t sound great, I know. But hear me out.
In the last few months, I’ve relied on grocery delivery more than I ever thought I would. Grocery shopping has always been fun for me — I like picking out produce, browsing the aisles to see what kind of new nut butter I want today, and even just getting out of the house.

My first meal with them was this carrot noodle salad — simple, fresh, and easy. You don’t need any special equipment. A vegetable peeler will turn your carrots into broad flat noodles in no time. With an easy peanut sauce, and some crunchy peanuts, and a dash of crunchy sea salt it makes a healthy lunch that is refreshing, and different from the usual sandwich or in my case yogurt and granola.

This carrot noodle salad is easy and tasty when drizzled with an amazing peanut dressing. Perfect for a quick healthy lunch, or alongside your favorite protein for dinner.

Equipment

Ingredients
  

Salad:

  • 4 carrots
  • 1/4 cup finely chopped cilantro
  • 1/4 cup chopped toasted peanuts

Dressing:

  • 2 tablespoons creamy peanut butter
  • 1 teaspoon grated ginger
  • 1 clove garlic grated
  • 1 tablespoon soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon maple syrup or honey to taste
  • 1/4 teaspoon 1/4 teaspoon crushed red pepper flakes or Hot Roasted Garlic
  • Juice of 1 lime
  • Coarse sea salt

Instructions
 

  • Using a vegetable peeler, cut the carrots into long flat noodles. Add them to a large bowl, and toss with the cilantro and peanuts.
  • To make the dressing put everything in a mixing bowl and whisk until well combined. Taste and adjust based on your personal preferences.
  • To serve, toss the salad with the dressing and serve immediately.
