Tiramisu Overnight Oats

Tiramisu overnight oats are dessert for breakfast. So good.
Italian food is not my favorite cuisine. I like it. I’ll eat it for sure. But tiramisu is definitely one of my favorite desserts. There’s something about the creamy, coffee flavor that gets me every time. And you can be sure that if I see it on a restaurant menu, I’ll order it every time.

As you may imagine, January is a time for eating fewer desserts, not more. But what if you can have dessert that is healthy(ish) and eat it for breakfast?
That’s what I’m telling you here. You can. You’ll need to make it the night before. But it’s super easy, and in the morning you can just eat and run.

It starts with regular old rolled oats. If you’ve made overnight oats before, this is very much the same. Add milk, a few flavorings, and pop in the refrigerator. The flavorings, in this case, are instant coffee (I use this — you just use a whole pack) mascarpone cheese, and vanilla yogurt. I used oat milk, but you can use whatever milk you want.
In the morning your oats taste of vanilla and coffee, and all things good in life. But there’s more magic to be had. Because you’re going to put a layer of sweetened mascarpone on top and then dust with cocoa. Bam. Tiramisu overnight oats.
Now I know what you’re thinking, and I’m with ya. This is not tiramisu, and it’s not the healthiest way to eat oatmeal. But it is delicious and tastes enough like tiramisu that you can be happy to be eating it for breakfast. While also getting some fiber in your diet, and being able to feel a little bit good about how you’re starting your day. And during these times, that should count for something, right?

Ingredients
  

Oats:

  • 3/4 cup rolled oats
  • 1/2 cup oat milk or milk of your choice
  • 1 teaspoon instant coffee
  • 1 tablespoon sugar more or less to taste
  • 1 tablespoon mascarpone cheese
  • 2 tablespoons vanilla yogurt
  • 1/2 teaspoon vanilla extract
  • Pinch salt

Mascarpone layer:

  • 2 tablespoons mascarpone
  • 2 teaspoons turbinado sugar
  • 1/4 teaspoon vanilla extract
  • Cocoa powder for dusting

Instructions
 

  • Combine the ingredients for the oats in a bowl and stir until mixed well. Cover and refrigerate overnight.
  • When ready to serve, divide into ramekins, and use a spoon to even out the oats.
  • Mix the mascarpone, sugar, and vanilla in a bowl until well combined, and spread over the oats.
  • Dust with a light amount of cocoa and enjoy!

Notes

Storing leftovers: Oats can be stored in the fridge for 2 days.
