Picture this. You are tasked with bringing an appetizer to a potluck or backyard barbecue. You pick up a bag of chips and salsa, because who doesn’t like chips and salsa?

That’s the problem. Everyone loves chips and salsa, so when you get there, you find not just one but multiple. Most are made of tomatoes because that’s the standard for salsa. And there’s nothing wrong with that. But what makes yours stand out?
What if it were made of no tomatoes at all? What if instead it were made of the summer’s other best fruit, strawberries. Yes, strawberries. If you’ve never had strawberries in any kind of savory situation, then you are missing out. Especially if they are the deep red summer variety that is only sweet and flavorful for a short time of the year. I mean, why not? We eat mango or pineapple salsa with no problem. Why not strawberries?
There’s no reason. In fact, you should try it now. Get the best strawberries you can muster up and mix them with the same ingredients you would your pineapple or tomato and grab some chips. Jalapeños, lime juice, and yes, even red onions. Mix it all up and let it chill in the fridge for a couple of hours before bringing it back to room temperature. Then grab your favorite chips and be prepared to gorge yourself because you won’t be able to stop eating this.
Have leftovers? You probably won’t, but if you do, you can spoon this over grilled chicken or fish, add it to a salad, or add some to a wrap or taco. It is definitely a different kind of flavor than traditional tomato salsa, but you will love it.

  • 1 pint strawberries hulled and chopped
  • 1 jalapeno seeded and minced
  • 1/4 cup diced red onion
  • 1 small bunch cilantro
  • Juice and zest of 1 lime
  • Sea salt and fresh ground pepper to taste

Instructions
 

  • Combine all of the ingredients in a mixing bowl and mix well.
  • Serve immediately or chill until ready to serve. Flavors will be better if chilled for a few hours.
