Lemon Lentil Quinoa Soup

I love soups that are delicious and super healthy, and easy lentil soup recipe fits perfectly. It’s full of hearty lentils, quinoa, and veggies, so it’s perfect for a cold Monday night after a long weekend of over indulging.
It uses tons of garlic, and both lemon juice and zest give it a bright and sunny flavor. On a cold night, that is perfection.
You can add almost any veggies you like here. I picked corn and kale, because I love them both, but it would work well with spinach or bell peppers I think. Pureed just a bit gives it some body, and topping it with a dollop of tangy yogurt rounds it out beautifully. Some toasted pita bread if you have it would work nicely here.

Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion diced
  • 2 carrots diced
  • 5 cloves garlic minced
  • 2 cups finely chopped kale or spinach
  • 2 teaspoons cumin
  • 1 teaspoon curry powder
  • 6 cups broth of your choice
  • 1 1/2 cups red lentils
  • 1/2 cup corn kernels frozen or canned and drained
  • 1 cup cooked quinoa
  • Pinch cayenne pepper
  • Zest and juice of 1 lemon
  • Sea salt and fresh ground pepper to taste

Instructions
 

  • Heat the oil in a heavy Dutch oven over medium heat. Add the onion and carrots, and cook until softened.
  • Add the garlic, kale, and seasonings. Stir and cook for 2 minutes.
  • Add the broth and lentils and bring to a boil. Reduce to a simmer, and simmer for 15 minutes, or until lentils are tender.
  • Add the corn and quinoa, simmer for 5 minutes.
  • Put half of the soup in a blender and puree and add back to the pot. Simmer until heated through, and add the cayenne and lemon. Taste, and adjust seasoning with salt and pepper.
  • Serve immediately.
