Lemon Goat Cheese Ravioli with Pink Peppercorns

Homemade ravioli sounds complicated, but this is actually something you can make on a weeknight without many problems. You don’t need a pasta maker; instead, just pick up a package of wonton wrappers — you won’t be able to tell the difference.
This version is filled with creamy goat cheese and lemon, and then served with a simple olive oil drizzle and sprinkle of pink peppercorns.
If you’ve never had pink peppercorns, they’re a bit different from the black ones you may be used to. For one thing, they’re soft enough that you can crumble them with your fingers, but they’re also a bit sweeter, with a fruity flavor. A bit of pepper, but it’s much more complex. Especially for a dish as simple as this.

Ingredients
  

  • 2 dozen wonton wrappers
  • 4 ounces soft goat cheese
  • Juice and zest of 1 lemon
  • 1 egg beaten
  • 1 teaspoon pink peppercorns
  • Fresh black pepper
  • Colima Sea Salt
  • Fresh thyme leaves
  • Pink peppercorns crushed
  • Olive oil for drizzling

Instructions
 

  • Lay a dozen of the wonton wrappers on a baking sheet.
  • Mix the goat cheese with the lemon juice, zest, and a pinch of salt. Spoon about a teaspoon of the mixture in the center of each wrapper.
  • Brush the beaten egg around the edges and top with another wrapper. Press to seal.
  • To cook, bring a pot of salted water to a boil. Add the raviolis, and reduce to a simmer. Cook for 1-2 minutes, until tender. Remove with a slotted spoon.
  • Sprinkle with fresh thyme, pink peppercorns, sea salt, and black pepper. Drizzle with olive oil and serve.
