Homemade ravioli sounds complicated, but this is actually something you can make on a weeknight without many problems. You don’t need a pasta maker; instead, just pick up a package of wonton wrappers — you won’t be able to tell the difference.
This version is filled with creamy goat cheese and lemon, and then served with a simple olive oil drizzle and sprinkle of pink peppercorns.
If you’ve never had pink peppercorns, they’re a bit different from the black ones you may be used to. For one thing, they’re soft enough that you can crumble them with your fingers, but they’re also a bit sweeter, with a fruity flavor. A bit of pepper, but it’s much more complex. Especially for a dish as simple as this.

Lemon Goat Cheese with Pink Peppercorns
Tender homemade raviolis filled with creamy lemon goat cheese.
Ingredients
- 2 dozen wonton wrappers
- 4 ounces soft goat cheese
- Juice and zest of 1 lemon
- 1 egg beaten
- 1 teaspoon pink peppercorns
- Fresh black pepper
- Colima Sea Salt
- Fresh thyme leaves
- Pink peppercorns crushed
- Olive oil for drizzling
Instructions
- Lay a dozen of the wonton wrappers on a baking sheet.
- Mix the goat cheese with the lemon juice, zest, and a pinch of salt. Spoon about a teaspoon of the mixture in the center of each wrapper.
- Brush the beaten egg around the edges and top with another wrapper. Press to seal.
- To cook, bring a pot of salted water to a boil. Add the raviolis, and reduce to a simmer. Cook for 1-2 minutes, until tender. Remove with a slotted spoon.
- Sprinkle with fresh thyme, pink peppercorns, sea salt, and black pepper. Drizzle with olive oil and serve.
