Garlic Herb Potato Skins

Groceries have been kind of all over the place lately, both when it comes to price and availability of certain things. When your job relies on a lot of grocery shopping, this makes life difficult.
While things have calmed down a bit for now, a couple weeks ago I saw potatoes on sale, and picked up a 5 pound bag, which I normally don’t do. Not because I don’t love potatoes, but because I’ve seen what happens when you buy a bag of potatoes and forget about them in your pantry. It’s….not pretty. I’ll just leave it at that.
In trying to avoid that situation again, I realized a few days ago that I had quite a few potatoes to use up. With some fairly large baking potatoes that needed to be used up, potato skins were on the menu, but a healthier version. Baked, but still crisp, and with tons of extra flavor with herbed garlic butter. Topped with your favorites, this becomes an easy favorite.
The worst part of this recipe is the time it takes to bake your potatoes, but once that is done, it’s smooth sailing.  You also need to use up the insides, which is easily accomplished with mashed potatoes or homemade gnocchi. Not so bad, huh?

Garlic Herb Potato Skins

Ingredients
  

Potatoes:

Garlic butter:

  • 4 tablespoons unsalted butter
  • 2 cloves garlic minced or grated
  • 2 tablespoons mixed fresh chopped herbs — parsley rosemary, basil
  • 1 teaspoon lemon juice

Toppings:

  • 1 cup grated sharp cheddar cheese
  • Crumbled bacon
  • Chopped green onions
  • Sour cream
  • Hot sauce

Instructions
 

  • Preheat oven to 425 degrees F.
  • Coat the potatoes with oil and salt, and prick with a fork. Put on a baking sheet and bake for about an hour until potatoes are tender. Remove from oven and let rest for 15 minutes.
  • Cut potatoes in half lengthwise and scoop out as much of the insides as you can. Reserve for another use.
  • Put the potato skins back in the oven for 5 minutes to crisp up.
  • Combine the butter, garlic, herbs, and lemon juice. Remove the potatoes, brush with garlic butter on both sides, and pop back in the oven for 5 minutes.
  • Remove and sprinkle evenly with cheese. Bake again for 5 minutes or until cheese is melted and bubbly.
  • Remove and top with your favorite toppings.
