Cheesy Cauliflower Potatoes

Cheesy cauliflower potatoes make a healthy version of a traditional side dish that everyone will love.
I like vegetables and try to eat as many as I can, whether in a giant salad, roasted as a side, or blended into soups.

That being said, I find myself going through periods where I don’t eat many. Usually, this is due to a change in routine like a vacation or something. A close relative was in the hospital in a different state recently and the entire week we visited, I think I subsisted on coffee and doughnuts. I know these things are temporary, so I don’t worry about them too much, but for that reason, I always try to incorporate veggies even when you might not find them otherwise.
Like these cheesy cauliflower potatoes. Yes, I know that potatoes are technically a vegetable, but we don’t really count that these days do we? I’m unsure. Either way, I know I don’t need more potatoes and cheese in my life (okay, I definitely do!) But some cauliflower and onions add a bit of bulk and reduce the carbs, without really sacrificing much. It’s a small victory, sure, but a win nonetheless.
Unlike many potato au gratin-type recipes, for this one, I just combined the veggies in a baking dish and the remaining ingredients in a bowl. Top the veggies with the cheese/milk/eggs, and bake. No tedious layering necessary. For the cheese, I used sharp cheddar and Parmesan, but anything you like will do. The top gets browned and bubbly, while the veggies are tender and delicious. This is perfect for bringing to a holiday party or backyard barbecue but can also be a dinner side on a weeknight. Or in my case, a dinner all on its own. Super yum.

Cheesy Cauliflower Potatoes

These cheesy cauliflower potatoes are lower in carbs but not lower in flavor. Perfect for your next holiday get together.

Ingredients
  

  • 1 head cauliflower cored, cut into thin slices
  • 1 pound potatoes thinly sliced
  • 1 onion sliced
  • 4 cloves garlic minced
  • 1/4 cup butter melted
  • 2 cups grated sharp cheddar
  • 1 cup grated Parmesan
  • 1 cup whole milk
  • 2 eggs beaten
  • Sea salt and fresh ground pepper to taste

Instructions
 

  • Preheat oven to 375 degrees F.
  • Combine the cauliflower and potatoes with the onions and garlic in a casserole dish. Drizzle the melted butter on top.
  • Combine the cheeses, milk and eggs in a bowl and mix well.
  • Spread evenly on top of the potato mixture.
  • Cover and bake for 30 minutes. Remove cover and bake for 20-25 more minutes until top is browned.
  • Let rest for 5-10 minutes before serving.
