blueberry chocolate chip cookies

after i graduated from culinary school i worked in a bakery. we made the best breads, pastries, and other sweets but the one that stood out was these blueberry chocolate chip bars. it sounds like a weird combo — usually chocolate is paired with raspberry or strawberry — but these were amazing and sold out every single day.

 

these cookies are inspired by those bars and if you like blueberries i urge you to try them.

 

you’ll want to use frozen blueberries in these. two reasons — frozen is almost always tastier,  and frozen will keep the dough from spreading since you’re adding more liquid from the fruit.

these taste like the best combination of a blueberry muffin and a chocolate chip cookie.

Ingredients
  

  • 2 sticks unsalted butter softened
  • 1/2 cup 100g granulated sugar
  • 1 1/2 cups 200g brown sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking soda
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 2 1/2 cups 400g ap flour
  • 2 cups chocolate chips i use mixed chips
  • 1 cup frozen blueberries

Instructions
 

  • preheat oven to 375 degrees
  • beat the butter and two sugars in a stand mixer until fluffy — 4 minutes
  • add the eggs and vanilla and beat until combined — 2 minutes
  • add flour, salt, baking soda, and baking powder. beat on low until just combined
  • add chocolate chips and blueberries and beat until combined
  • scoop two tablespoons dough 2 inches apart on parchment lined baking sheet
  • bake for 10-12 minutes until edges are brown and cool on a cooling rack
