Ingredients

Dressing:
1/2
cup
avocado oil
(or olive oil)
Juice of 2 lemons
1
teaspoon
apple cider vinegar
1
teaspoon
Dijon mustard
2
cloves
garlic
grated
1
tablespoon
honey
more or less to taste
Sea salt and fresh ground pepper
to taste
Salad:
4
cups
shredded cabbage
any color (I sometimes buy bagged coleslaw mix)
1/2
red onion
thinly sliced
1
large tart crisp apple
such as Honeycrisp, cored and thinly sliced
1/2
cup
dried cranberries
Instructions
Make the dressing by putting all of the ingredients in a jar. Shake until well combined. Taste, and adjust the seasonings to your preference.
Put all of the salad ingredients in a large bowl. Add the dressing, and toss until well coated.
Serve immediately.
