I use King Arthur, but you could also use AP flour if not gluten-free

teaspoon
sea salt

tablespoon
baking powder

tablespoons
sugar
1 1/2
cups
almond milk
1
teaspoon
vanilla extract
1
teaspoon
maple extract
4
tablespoons
melted coconut oil or vegan butter
1/3
cup
aquafaba
liquid from a can of chickpeas
1
pint
fresh blueberries
To serve:
Maple syrup
Vegan butter
Extra blueberries
Powdered sugar
Instructions
Preheat your waffle iron according to the manufacturers instructions.
Combine the flour, salt, baking powder and sugar in a large bowl.
Add the almond milk, extracts, and coconut oil to a mixing cup.
Put the aquafaba in a bowl and whisk — you can use a hand mixer or whisk by hand. Whip until fluffy.
Add the liquid to the dry and then fold in the whipped aquafaba.
Stir in the blueberries.
Pour the batter in the waffle iron and cook until done.
Serve with desired accompaniments.
