Lay a dozen of the wonton wrappers on a baking sheet.
Mix the goat cheese with the lemon juice, zest, and a pinch of salt. Spoon about a teaspoon of the mixture in the center of each wrapper.
Brush the beaten egg around the edges and top with another wrapper. Press to seal.
To cook, bring a pot of salted water to a boil. Add the raviolis, and reduce to a simmer. Cook for 1-2 minutes, until tender. Remove with a slotted spoon.
Sprinkle with fresh thyme, pink peppercorns, sea salt, and black pepper. Drizzle with olive oil and serve.
