Instructions
Combine the water and milk in a small saucepan. Heat on low until about 110 degrees — it will be lukewarm, not hot.
Put the milk in the bowl of a stand mixer. Add the honey and yeast, stir, and let sit for about 5 minutes until yeast is foamy.
Add the flour, sunflower seeds, salt, and butter. Using dough hook, turn to low until combined. Turn up to medium and knead the dough for 5-10 minutes until dough is slightly sticky, smooth, and very soft.
Drizzle a tiny bit of olive oil into a large mixing bowl and add the dough to the bowl. Cover with a towel or loose plastic wrap and let rise at room temperature for about about an hour, until dough has doubled in size. Punch the dough down, transfer to a lightly floured surface and shape the dough into a loaf.
Spray a bread pan with cooking spray. Transfer loaf to pan, sprinkle with sunflower seeds if desired, and cover with a towel. Let rise for about 30 minutes while oven preheats to 350 degrees.
Bake the bread for 40-45 minutes, until crust is well browned.
Let cool for 20 minutes before removing from pan. Let cool completely before slicing.
