Heat a large skillet over low heat. Add the oats, spread in an even layer and toast for about minute. Add the salt and coconut oil and stir until oil is melted. Toast for another 5 minutes.
Add the maple syrups slowly and stir until coated.
Add the almonds, coconut flakes, and vanilla and stir for about a minute.
Turn off heat and stir in the goji berries.
Immediately transfer to a heat proof bowl.
Let cool before stirring.

Storing leftovers: Store leftovers in an airtight container for up to a week.Variations: Any nut or seeds can be added and you can swap the honey for maple syrup.
