Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
Using a teaspoon, scoop out a teaspoon of cheese at a time about two inches apart on your prepared baking sheet. Carefully, press the cheese into a flat disc that is even thickness all around. If using a seasoning, sprinkle a bit on each disc. Use as many seasonings as you like.
Bake for 10-12 minutes, until golden brown. Remove from oven and let cool for 10 minutes before removing from the pan. They’ll crisp up nicely when completely cooled.
