Lay a long sheet of aluminum foil on a clean surface. Place the fish on the foil. Season liberally with salt and pepper. Lay the lemon slices over top of the salmon.
Combine the butter and garlic and pour over the salmon.
Wrap the foil around the salmon, using another piece to cover completely.
Transfer foil pack to a baking sheet and bake for 10-15 minutes, or until salmon is cooked to your liking.
Carefully open the foil (watch out for steam!) and sprinkle with fresh chopped parsley and grated Parmesan.
