Preheat oven to 300 degrees F. Line a baking sheet with parchment paper.
Combine the oats, graham cracker crumbs, coconut, brown sugar, half the lime zest, and salt in a mixing bowl.
In a separate bowl, whisk the melted butter, lime juice, and vanilla.
Add the wet to the dry ingredients and mix well. Spread on prepared baking sheet.
Bake for 20 minutes. Stir. Bake for 20 more minutes. At this point, check to see what the granola looks like — it should be golden brown and crisp. If so, remove it from oven. If not, let bake for another 5 to 10 minutes. It will crisp up slightly as it cools.
Let cool completely, then stir in the white chocolate chips and remaining lime zest.
Store in an airtight container.
