avocado oil
or olive oil

plain Greek yogurt
Juice and zest of 1 lemon
Fresh chopped herbs
chives, parsley, mint all work well
Sea salt and fresh ground pepper
to taste
Instructions
First, roast the garlic — cut the end off the garlic bulb to expose the cloves (not the root end.)
Put it on a piece of foil, drizzle with oil and wrap up tightly.
Put on a baking sheet and roast for 40 minutes.
Remove, let cool, and squeeze the bulb into a medium bowl.
Add the remaining ingredients and stir well.
Refrigerate until ready to serve.
