2ouncessharp white cheddar cheeseshredded or thinly sliced
1/4cuproasted and salted sunflower seeds
Dressing:
1/4cupgood quality olive oil
Juice and zest of 2 lemons
1small shallotminced
1teaspoonDijon mustard
2clovesgarlicgrated
Instructions
Massage the kale with your fingers for a few minutes until broken down, and add it to a large bowl. Add the remaining ingredients.
To make the dressing, put all of the ingredients in a jar and shake until well combined. Taste, adjust the seasoning, and add it to the salad before serving. Enjoy immediately.
