Preheat oven to 350 degrees F. Line a 13x9 sheet pan with parchment.
Put 1 cup water in a pot and bring to a boil.
Combine all of the ingredients except the everything bagel seasoning in a bowl and stir to combine.
When the water boils, add the seeds and turn the heat off. Stir and let sit for 10 minutes.
Spread the mixture onto your prepared baking sheet in a thin even layer. Sprinkle with everything bagel seasoning.
Bake for 30-40 minutes, until top is dry and edges are brittle. If it’s really flexible after 40 minutes, turn the oven off and leave the pan in the oven for 5-10 minutes.
Let cool completely and break into pieces.
