jar marinara sauce

olive oil
To serve:
Polenta
couscous, or pasta
Goat cheese
Fresh basil
Instructions
Preheat oven to 375 degrees F.
Thinly slice the vegetables and layer them in a square casserole dish.
Pour the marinara over top.
Drizzle with olive oil.
Cover with foil and bake for about 45 minutes.
Serve over your favorite pasta or grain, and top with goat cheese and basil leaves.
