Orange and Sesame Peanut Noodles

linguini noodles
Sauce:
3
tablespoons
toasted sesame oil
1/4
cup
peanut butter
2
cloves
garlic
minced
2
teaspoons
fresh grated ginger
2
tablespoon
soy sauce
1
teaspoon
sambal oelek or Sriracha
Juice of 1 lime
Juice and zest of 1 orange
To serve:
1/4
cup
chopped peanuts
Handful fresh chopped cilantro
Handful fresh sliced scallions
Hot Roasted Garlic or red pepper flakes
for serving
Instructions
Cook the noodles according to the package directions.
While the noodles are cooking, put the sauce ingredients in a large mixing bowl and whisk until smooth.
When the noodles are done, drain and add to the sauce. Add the peanuts, cilantro, and scallions. Toss to coat.
Divide into bowls and sprinkle with pepper flakes if desired.
Notes
Storing leftovers:
Leftovers can be stored in the fridge for up to two days. Delicious cold, but can also be reheated.
