cooked chickpeas
drained

tablespoons
olive or avocado oil

tablespoon
curry powder
1/2
teaspoon
sea salt
Fresh chopped mint

Instructions
Preheat oven to 425 degrees F.
Drain the chickpeas and use paper towels to dry them as well as you can. Remove any skins that come off, and make sure they are dry.
Toss the chickpeas with the oil, curry, and salt. Spread on a sheet pan.
Roast for 20-30 minutes, until they are browned and crisp.
Let cool and eat as soon as possible for maximum crispiness.
