Date and Tahini Salted Caramels
For a healthy sweet and salty treat, these bite sized caramels are the perfect choice. Chewy, caramel like dates and nutty tahini make the perfect pair.

Ingredients

pitted dates
any variety

cup
tahini

tablespoons
coconut oil

teaspoon
vanilla extract
Coarse sea salt
Pecan halves
optional
Instructions
Put the dates, tahini, coconut oil, and vanilla in a blender or food processor. Blend until smooth.
Line a small sheet pan or loaf pan with parchment. Transfer the mixture to the pan and spread as evenly as you can.
Sprinkle with salt.
Freeze until firm. Remove the parchment, cut into squares, and top each with a pecan if using, pressing down to get it to stick.
Store in an airtight container in the freezer.
