Combine oats, nuts, and seeds in a large bowl. Add a pinch of salt. Whisk the coconut oil, maple syrup and vanilla in a bowl and pour over the oat mixture.
Stir well, making sure to coat everything evenly.
Spread on a parchment lined baking sheet and bake for 20 minutes.
Remove from oven and let cool. Stir in the cherries and add more salt if desired.
