Gluten-Free Chickpea Flatbread

This gluten-free flat bread comes together quickly and is perfect for a cheese plate, or to go alongside your favorite soup or salad.
  • 1 cup chickpea flour (also called garbanzo flour or besan)
  • 1 cup water
  • 2 tablespoons olive oil
  • Toppings — coarse salt, fresh chopped herbs
  1. Combine the chickpea flour, water, and oil in a mixing bowl until combined. Let sit at room temperature for 30 minutes.
  2. Put a 10 inch cast iron skillet in the oven and heat to 500 degrees.
  3. When the batter is is done resting, turn the oven to broil and remove the skillet.
  4. Pour the batter into the skillet and place under the broiler.
  5. Broil for 5-10 minutes, until the edges turn brown and it blisters a bit. Remove.
  6. Slice the flat bread into 6 pieces and serve with your favorite accompaniments.
