Garlic Lemon Spinach

A quick and easy side dish that is healthy, delicious, and goes with just about everything. Perfect when you need a veggie in a flash!
  • 1 tablespoon olive oil or avocado oil
  • 3 cloves garlic, minced
  • 10 ounces baby spinach
  • 1 tablespoon lemon juice
  • Sea salt and fresh ground pepper, to taste
  1. In large deep skillet, heat the oil to medium. Add the garlic and a pinch of salt and stir with tongs for 30 seconds.
  2. Add the spinach and as quickly as you can, stir it until it starts to wilt. Turn the heat off, add the lemon juice and keep stirring.
  3. Season with more salt and pepper to taste, and serve immediately.
